They set fire to the vehicle which had smashed the front of the jewellers, in the Rue Castiglione just off the Place Vendôme, and drove off in a second car.
Many of the most famous names in jewellery have their flagship stores in the Place Vendôme area of the French capital.
It is the latest in a spate of jewellery thefts in Paris and the Côte d’Azur.
Also last night, two men held up staff at a company which provides meals for France’s high speed TGV trains.
The brandished a Kalachnikov and an automatic pistol, and stole the weekend’s takings, estimated by sources close to the enquiry to be around 60,000 euros.
The thieves escaped on a scooter.
