Eating insects struggles to take off in France

There are over 1,400 species of insects that are known to be edible and there may be more. Outside Europe and north America, insects are a popular, and regular, part of people's diets. As recognition that mean consumption contributes to global warming, and deforestation, even the UN has suggested insects could be an affordable, sustainable protein source. But in France eating insects remains taboo. A few entrepreneurs have risen to the challenge of changing attitudes but it's slow going.
